For breakfast I had a lovely breakfast bowl filled with goodies such as grapes, almonds, granola, raisins, raspberries and all swirled into a mixture of berry soy yoghurt and plain coconut yoghurt! Delicious and quite pretty if I do say so myself 😉

My lunch consisted of some left-overs from the day before…a mixture of rice and lentils with a side of seasoned veggies. Easy peasy!

In the afternoon I felt a little peckish so I decided to make myself a smoothie: almond milk, frozen raspberries and blackberries, honey and a little bit of peanut butter et voilà!

Dinner was just a big bowl of salad with a balsamic vinaigrette dressing, walnuts and various other seeds and dried fruits 🙂

I started the day off with a yummy smoothie made of almond milk, raspberries, strawberries, coconut water and oil, peanut butter, honey and a handful of spinach 😉 And I also had some plain soy yoghurt and oatmeal flakes topped with chopped almonds, grapes, raisins, raspberries, a drizzle of honey and some cinnamon. I think breakfast is becoming my favourite meal of the day…I used to eat very little – if anything – in the mornings but now I actually go to bed excited for the next day’s breakfast! haha

Lunch was a fresh salad made with a mix of lettuce, feta cheese and half a red bell pepper dressed with a balsamic vinaigrette.

For dinner I had chicken/veggie stir-fry with a side of guacamole, which is a combination I never had before but I really enjoyed it.

Yes, you probably guessed it, berry soy yoghurt, soaked almonds and raisins for breakfast never disappoints. 🙂

For lunch I made a broccoli-almond based pizza topped with fresh tomato sauce, sun-dried tomatoes, arugula (rocket), onions and pine nuts. I didn’t use eggs in my base and for some reason I my “dough” always crumbles when I serve it…but it still tastes just as good 😉

In the afternoon I whipped up a smoothie made of apple juice, berries, spinach and a little bit of almond milk. Soooo delicious but soooo healthy! LOVE

I had some home-made vegetable soup left from the night before, so I just reheated that and I think it even tasted better than the fresh version. This soup is made from various veggies such as cauliflower, broccoli, leek, carrots…and most importantly sweet potatoes. They just make it taste so much “fuller” and better!

This morning I really felt like having egg for breakfast so I made an omelette filled with some cheese, folded it in half and ate it with a crisp bread. In addition to that, I made my hazelnut milk, dates,cocoa powder and honey smoothie again! But this time I added some grapes too which gave it some extra sweetness. Just make sure you don’t add too many, otherwise I find it tastes a little…weird 😉

My lunch consisted of some nachos – but not the regular kind! The “chips” were made from quinoa, brown rice and flax seeds. Of course I had to have some molten cheddar, guacamole and salsa with that!

For dinner I had a couple of slices of broccoli-salmon quiche and a side of salad topped with red bell peppers and feta cheese.

Lately I’ve been really interested in different kinds of diets such as raw and vegan so I have started to try out a few recipes and this first smoothie is one of them. It is made from hazelnut milk, dates, honey and cocoa powder. And you know what? I think it’s delicious! And I don’t feel bloated or uncomfortable like I would after drinking regular chocolate milk.

In addition to my smoothie, I had some unsweetened apple sauce that I spruced up with a little bit of cinnamon.

For lunch I made some sandwiches with avocado, humus, pesto and salad leaves. This has become one of my favourite sandwiches now! I first had it in a restaurant called 42°Raw in Copenhagen and I was sooo impressed with how good everything there tasted!

With my sandwich I had a carrot-apple-peppermint juice! So refreshing!

In the evening I had a cauliflower crust pizza topped with tomato sauce, chorizo and feta cheese. Great alternative if you’re craving pizza but you want a healthier option!

One of my favourite things to eat in the mornings (or any time to be honest 😉 ) is yoghurt and granola.

This morning I felt like I needed some extra vitamins and I made myself an apple-carrot smoothie as well. And as it was a rainy day I also had a warming cup of jasmine green tea.

For lunch I had a couple of slices of tarte flambee topped with leek, bacon, onion and sour cream. Delicious!

For supper I had some chicken curry with cauliflower rice, raisins and roasted cashew nuts (usually we use peanuts but we didn’t have any) which is one of my all-time favourite dishes.

And to end the evening we had some lovely home-made cheesecake with berry coulis and a chocolate cookie crust. It was so good! Thanks mummy 😉
