Breakfast Inspiration

When I was younger I never really used to eat breakfast, but now it has become my favourite meal of the day! So if you’re a little stuck in a rut and don’t really know what to eat in the early AM hours, here’s some inspiration for you.

Breakfast Bowls

One of the easiest and fastest breakfasts are nutritious breakfast bowls. As a base you can use anything from yoghurt, nana ice cream to an acai bowl and as far as toppings go, you have virtually unlimited options. Breakfast Bagel

If you like something a little more substantial, maybe after a morning workout, the breakfast bagel is a good option for you. Again, what you choose to fill your bagel with is entirely up to you. Two varieties I’d recommend are with salmon and cream cheese or avocado and scrambled eggs…Yumm!

And of course, a classic combination that will help fill you up, is any version of eggs and a side of avocado! If this doesn’t motivate you to get out of bed in the morning, I don’t know what will… 😉

This morning I had regular berry yoghurt (shocker, I know 😉 ), topped with oatmeal, some almonds and pumpkin seeds.

For lunch I had an egg omelette with salmon. Full of protein and healthy fats, yumm!

And lastly, my dinner consisted of a home-made chicken stir fry with a side of basmati rice, usually I would make this with cauliflower rice, but I didn’t have any.

This morning I started the day off with some plain soy yoghurt, ground and whole almonds, chia seeds and a sprinkle of raw cocoa powder.

One of my favourite lunches!! Salmon and avocado, onions and horseradish on crisp bread. It’s not only delicious but quite filling as well.

For dinner I made a mixed veggie, lentils and sweet potato bake with a red Thai curry sauce and on the side I had black quinoa and brown rice together. The sauce was a lot more spicy than I had anticipated so that’s why I have quite a lot of the quinoa/rice mixture on my plate hehe 🙂

This morning I had berry flavoured soy yoghurt topped with yummy fresh raspberries. Delicious! 🙂

For lunch I had a chicken stir fry and a side of juicy green grapes. Normally I would have some basmati rice with this kind of meal, but as I am currently trying to shed a couple of pounds I left the carbs out and I think the meal was still very enjoyable and filling. And I’ve gotta say: I loooove me some sweet grapes! 😉

This is one of my favourite meals ever! It’s really delicious, healthy and super easy to whip up. All you need is a crisp bread (or toast), guacamole, onions, horseradish mousse and of course: salmon. Rich in good fats and omega 3! Yumm…;)

This morning I really felt like having egg for breakfast so I made an omelette filled with some cheese, folded it in half and ate it with a crisp bread. In addition to that, I made my hazelnut milk, dates,cocoa powder and honey smoothie again! But this time I added some grapes too which gave it some extra sweetness. Just make sure you don’t add too many, otherwise I find it tastes a little…weird 😉

My lunch consisted of some nachos – but not the regular kind! The “chips” were made from quinoa, brown rice and flax seeds. Of course I had to have some molten cheddar, guacamole and salsa with that!

For dinner I had a couple of slices of broccoli-salmon quiche and a side of salad topped with red bell peppers and feta cheese.

As most mornings, I started my day of with a muesli! It was a berry yoghurt with nut and raisin granola.

For Lunch I had an egg white frittata with a little bit of cheese sprinkled on top and a yummy smoothie.

At least once a week I try to eat some fish and by far my favourite one is salmon! So that’s what I had for dinner: salmon and cauliflower “rice”.

Aaaand last but certainly not least…I had some dessert…a raspberry macaroon and some chocolate/raspberry mousse…;)
