Dinner was a big bulgur salad that we had with some fresh peppermint tea on the side.

For breakfast I had a lovely breakfast bowl filled with goodies such as grapes, almonds, granola, raisins, raspberries and all swirled into a mixture of berry soy yoghurt and plain coconut yoghurt! Delicious and quite pretty if I do say so myself πŸ˜‰

My lunch consisted of some left-overs from the day before…a mixture of rice and lentils with a side of seasoned veggies. Easy peasy!

In the afternoon I felt a little peckish so I decided to make myself a smoothie: almond milk, frozen raspberries and blackberries, honey and a little bit of peanut butter et voilΓ !

Dinner was just a big bowl of salad with a balsamic vinaigrette dressing, walnuts and various other seeds and dried fruits πŸ™‚

I started the day off with a yummy smoothie made of almond milk, raspberries, strawberries, coconut water and oil, peanut butter, honey and a handful of spinach πŸ˜‰ And I also had some plain soy yoghurt and oatmeal flakes topped with chopped almonds, grapes, raisins, raspberries, a drizzle of honey and some cinnamon. I think breakfast is becoming my favourite meal of the day…I used to eat very little – if anything – in the mornings but now I actually go to bed excited for the next day’s breakfast! haha

Lunch was a fresh salad made with a mix of lettuce, feta cheese and half a red bell pepper dressed with a balsamic vinaigrette.

For dinner I had chicken/veggie stir-fry with a side of guacamole, which is a combination I never had before but I really enjoyed it.

For my lunch I had guacamole and chili hummus on crisp bread and a big mixed salad. I am loooooving the combination of avocado and hummus at the moment!

My dinner consisted of a veggie burger made of lentils, sweet potatoes, beans and quinoa and a cole-slaw salad on the side.

This is hands down one of my favourite breakfasts ever! Plain soy yoghurt, topped with a handful of almonds and chia seeds and a little drizzle of agave syrup. Quick and easy for mornings when you don’t have a lot of time or don’t feel like preparing anything.

At lunch time I opted for a nice big bowl of salad consisting of red bell peppers, carrots, onions and baby spinach leaves “dressed by a balsamic vinaigrette”. πŸ˜‰

I still had an avocado left from the night before so I decided to have it along with some black quinoa and chili hummus, which turned out to be better than I thought.

I changed my breakfast up a little today and I did NOT – I repeat – NOT have soy yoghurt, but greek yoghurt instead πŸ˜‰ I drizzled some honey on top and added a handful of fresh blueberries!

Instead of coffee I made myself a cold “hot” chocolate by mixing some almond milk,raw cocoa powder, honey and a tiny bit of peanut butter…sooooo delicious…and I didn’t feel as bloated and uncomfortable as I usually do after having a chocolate-y drink.

For lunch I had this amazing salad! Spinach leaves, whole-wheat couscous, pomegranate seeds, red bell peppers and a balsamic vinaigrette on top – that’s all you need to make healthy taste sooo good.

As the afternoon went on I had to have a little snack and I opted for a juicy pink lady apple and a crisp bread with some peanut butter.

In the evening we had some lovely chicken filets with lemon sauce and basmati rice.

Aaaand to end the day we all had a small portion of cut-up strawberries mixed with some lime juice and sugar…yumm πŸ™‚

I started my day off with some plain soy yoghurt topped with some chopped walnuts and a drizzle of honey. I also had a glass of peach juice…or two…I looove that stuff! πŸ™‚

For lunch I made myself an omelette filled with feta cheese, fresh cherry tomatoes and some tomato paste to intensify the taste. I always make sure not to add too much of the cheese, otherwise it gets a little too salty.

In the afternoon I got a little hungry and decided to go for some trail mix. (mixture of nuts and raisins) I ended up polishing off the whole bowl…oops πŸ˜‰

And last but not least, I had a crisp salad topped with croutons, sunflower seeds, sun-dried tomatoes, parmesan cheese, onions and a nice pesto sauce. Yumm.

This morning I really felt like having egg for breakfast so I made an omelette filled with some cheese, folded it in half and ate it with a crisp bread. In addition to that, I made my hazelnut milk, dates,cocoa powder and honey smoothie again! But this time I added some grapes too which gave it some extra sweetness. Just make sure you don’t add too many, otherwise I find it tastes a little…weird πŸ˜‰

My lunch consisted of some nachos – but not the regular kind! The “chips” were made from quinoa, brown rice and flax seeds. Of course I had to have some molten cheddar, guacamole and salsa with that!

For dinner I had a couple of slices of broccoli-salmon quiche and a side of salad topped with red bell peppers and feta cheese.
