Breakfast Inspiration

When I was younger I never really used to eat breakfast, but now it has become my favourite meal of the day! So if you’re a little stuck in a rut and don’t really know what to eat in the early AM hours, here’s some inspiration for you.

One of the easiest and fastest breakfasts are nutritious breakfast bowls. As a base you can use anything from yoghurt, nana ice cream to an acai bowl and as far as toppings go, you have virtually unlimited options. If you like something a little more substantial, maybe after a morning workout, the breakfast bagel is a good option for you. Again, what you choose to fill your bagel with is entirely up to you. Two varieties I’d recommend are with salmon and cream cheese or avocado and scrambled eggs…Yumm!

And of course, a classic combination that will help fill you up, is any version of eggs and a side of avocado! If this doesn’t motivate you to get out of bed in the morning, I don’t know what will… 😉

For breakfast I had a delicious bowl of berry soy yoghurt with a Pink Lady apple, raisins and coconut chips! Soooo good 🙂

I had some cherry tomatoes left from the day before and decided to whip up some bruschetta; so I diced onions, garlic and the tomatoes, seasoned it with Italian herbs, olive oil and salt, scooped it all onto some toasted rye bread et voilà!

I got a little hungry in the afternoon, so I had some trail mix, consisting of various nuts and raisins.

And for dinner, as you can see, I had breakfast! 😉 Love me some eggs and avocado.

For breakfast I had a lovely breakfast bowl filled with goodies such as grapes, almonds, granola, raisins, raspberries and all swirled into a mixture of berry soy yoghurt and plain coconut yoghurt! Delicious and quite pretty if I do say so myself 😉

My lunch consisted of some left-overs from the day before…a mixture of rice and lentils with a side of seasoned veggies. Easy peasy!

In the afternoon I felt a little peckish so I decided to make myself a smoothie: almond milk, frozen raspberries and blackberries, honey and a little bit of peanut butter et voilà!

Dinner was just a big bowl of salad with a balsamic vinaigrette dressing, walnuts and various other seeds and dried fruits 🙂

I started the day off with a bowl of soy-coconut-yoghurt topped with frozen raspberries, raisins, oats and a drizzle of honey.

For lunch I had one of my all-time favourite combos! Avocado and chili hummus on rye bread, sooooo good 🙂

In the evening I just had some left-over quinoa/lentil mixture from the day before and whipped up some veggie and tofu stir-fry, that I seasoned with soy sauce and spices, to go with it.

Why Ginger Shots Are Worth The “Burn”

Something I absolutely love doing in the morning is having a shot! No, of course not that kind of shot…but a ginger shot! 🙂 Ginger is proven to be extremely beneficial to your health, and here are some of the reasons why:

-reduces pain and inflammation
-helps blood circulation
-fights nausea and motion sickness
-strengthens immune system
-prevents colds and flu
-can prevent certain forms of cancer

aaaand the list goes on and on. While I really didn’t like the burn that you can feel in your throat because of the warming sensation of ginger as a child, I’ve really come to appreciate it now, as I know how good it is for me! There are three different ways I like to enjoy my ginger drinks:

1. The easiest way is just to use your juicer. I prefer to use a small knob of the ginger root and then add the juice of one to two apples, depending on how intense you want the “burning” sensation to be. And then all there’s left to do is down it all in one gulp!

2. This method is for those of you who don’t own a juicer, but have a blender. Simply peel the amount of ginger you’re going to use, add your desired quantity of apple juice, blend it all together – and voilà!

3. And if you aren’t into the idea of strong shots at all, you can make some ginger tea. Again, peel your ginger root, slice it and boil it in water. Depending on the prefered intensity, let it simmer until it fits your taste. Let it cool a little and then sip joyfully 🙂

Eatin’ Raw!

I went out to grab a meal at a raw vegan place yesterday (I’ve blogged about it before – HERE‘s the link) called 42°Raw. I love how good you feel after having eaten there – you definitely feel very full but it’s in no way uncomfortable. You just feel really satisfied and like all of the well-preserved nutrients in the food nourished your body 🙂

42° Raw

Not too long ago I went to a little restaurant called 42°Raw that is situated in a mall in Copenhagen. Their food is all based on a raw vegan diet and you can choose between various dishes like sandwiches, salads, lasagna, risotto, pizza, etc. In addition to those meals, they serve you with a big selection of juices and smoothies and they even offer raw vegan desserts and hot drinks!

I’ve been quite tempted to try out raw food for a while as it has been all the rage the past few years. And boy do I understand why! Everything I tried was absolutely delicious! Not that I wasn’t expecting it to taste good…I just didn’t expect it to taste this amazing!

The first time I was there, I had an avocado sandwich topped with pesto, hummus and cucumber. And ooooh it was sooo good. In fact I liked it so much I even recreated it at home a couple of times (Click HERE to see the post with my home-made version) Furthermore, I have tried the risotto, the broccoli salad and the chili mayo sandwich and I haven’t encountered a dish I didn’t enjoy so far. In addition to the food, I have sipped my way through numerous juices and they didn’t disappoint either. My favourite ones are the ones that contain apple, mint and another fruit such as passion fruit or pineapple…YUMM! (i.e. Boston and London)

Due to the fact that these raw vegan meals are very nutrient-packed and healthy, I have found that you feel very filled and satisfied yet never bloated or uncomfortable. 42°Raw also sell their own recipe book which we had to take right home with us so that we can recreate all of that nutritious deliciousness at home 😉
