I started the day off with a bowl of soy-coconut-yoghurt topped with frozen raspberries, raisins, oats and a drizzle of honey.

For lunch I had one of my all-time favourite combos! Avocado and chili hummus on rye bread, sooooo good πŸ™‚

In the evening I just had some left-over quinoa/lentil mixture from the day before and whipped up some veggie and tofu stir-fry, that I seasoned with soy sauce and spices, to go with it.

I started the day off with a yummy smoothie made of almond milk, raspberries, strawberries, coconut water and oil, peanut butter, honey and a handful of spinach πŸ˜‰ And I also had some plain soy yoghurt and oatmeal flakes topped with chopped almonds, grapes, raisins, raspberries, a drizzle of honey and some cinnamon. I think breakfast is becoming my favourite meal of the day…I used to eat very little – if anything – in the mornings but now I actually go to bed excited for the next day’s breakfast! haha

Lunch was a fresh salad made with a mix of lettuce, feta cheese and half a red bell pepper dressed with a balsamic vinaigrette.

For dinner I had chicken/veggie stir-fry with a side of guacamole, which is a combination I never had before but I really enjoyed it.

In the morning I had a home-made breakfast bar, that I made out of peanut butter, oats, agave syrup, a little bit of almond milk and almond meal and I also stirred in a mixture of dried fruits, nuts and seeds. It was really good! I might have already eaten the whole batch I made…maybe πŸ™‚

For lunch I had a delicious salad with pomegranate seeds and falafel, some shredded carrots and cabbage and of course lettuce.

This is one of my favourite dinners! Chicken and cauliflower rice, curry sauce, topped with raisins and nuts… πŸ™‚ It always reminds me of my childhood as my mother made it a lot when I was growing up.

This morning I started the day off with some plain soy yoghurt, ground and whole almonds, chia seeds and a sprinkle of raw cocoa powder.

One of my favourite lunches!! Salmon and avocado, onions and horseradish on crisp bread. It’s not only delicious but quite filling as well.

For dinner I made a mixed veggie, lentils and sweet potato bake with a red Thai curry sauce and on the side I had black quinoa and brown rice together. The sauce was a lot more spicy than I had anticipated so that’s why I have quite a lot of the quinoa/rice mixture on my plate hehe πŸ™‚

For my lunch I had guacamole and chili hummus on crisp bread and a big mixed salad. I am loooooving the combination of avocado and hummus at the moment!

My dinner consisted of a veggie burger made of lentils, sweet potatoes, beans and quinoa and a cole-slaw salad on the side.

Yes, you probably guessed it, berry soy yoghurt, soaked almonds and raisins for breakfast never disappoints. πŸ™‚

For lunch I made a broccoli-almond based pizza topped with fresh tomato sauce, sun-dried tomatoes, arugula (rocket), onions and pine nuts. I didn’t use eggs in my base and for some reason I my “dough” always crumbles when I serve it…but it still tastes just as good πŸ˜‰

In the afternoon I whipped up a smoothie made of apple juice, berries, spinach and a little bit of almond milk. Soooo delicious but soooo healthy! LOVE

I had some home-made vegetable soup left from the night before, so I just reheated that and I think it even tasted better than the fresh version. This soup is made from various veggies such as cauliflower, broccoli, leek, carrots…and most importantly sweet potatoes. They just make it taste so much “fuller” and better!

I tried a little something different…I can’t find that many different flavours of soy yoghurt so I decided to make one myself. I just used regular plain soy yoghurt and added some raw cocoa powder and agave syrup, then some chia seed and fresh raspberries. Yumm!

For lunch I decided to make a little “greek-inspired” salad with half a feta cheese block and half a red bell pepper with a balsamic vinaigrette.

Later in the afternoon I felt a little hungry so I had some carrots and dipped them in chili hummus. Love this snack!

I had some brown rice left over from the night before, so I whipped up some egg and vegetable fried rice seasoned with soy sauce and some spices.

This is hands down one of my favourite breakfasts ever! Plain soy yoghurt, topped with a handful of almonds and chia seeds and a little drizzle of agave syrup. Quick and easy for mornings when you don’t have a lot of time or don’t feel like preparing anything.

At lunch time I opted for a nice big bowl of salad consisting of red bell peppers, carrots, onions and baby spinach leaves “dressed by a balsamic vinaigrette”. πŸ˜‰

I still had an avocado left from the night before so I decided to have it along with some black quinoa and chili hummus, which turned out to be better than I thought.
