I started my day off with some plain soy yoghurt topped with some chopped walnuts and a drizzle of honey. I also had a glass of peach juice…or two…I looove that stuff! 🙂

For lunch I made myself an omelette filled with feta cheese, fresh cherry tomatoes and some tomato paste to intensify the taste. I always make sure not to add too much of the cheese, otherwise it gets a little too salty.

In the afternoon I got a little hungry and decided to go for some trail mix. (mixture of nuts and raisins) I ended up polishing off the whole bowl…oops 😉

And last but not least, I had a crisp salad topped with croutons, sunflower seeds, sun-dried tomatoes, parmesan cheese, onions and a nice pesto sauce. Yumm.

One of the best sandwiches? Definitely a breakfast sandwich! This one is made up of whole wheat toast filled with an egg omelette, bacon, lettuce and a little bit of cheese…so good!

For lunch I had a yummy tomato risotto that I topped with a sprinkle of freshly grated parmesan. After that, I had an apple as dessert which I forgot to take a picture of…sorry 🙂

Then I ended my day with a healthy chicken vegetable soup which was perfect because it was cold and rainy outside.

#PA: Month 5

I can’t believe I’m already almost halfway there! This has been a good journey so far, just taking one month at a time and trying to improve a little bit every time…which – if I’m completely honest – didn’t happen each month…;) but it’s all about consistency and staying on track, which I do think that I have.

During Month 5 I have been focusing more on workouts rather than nutrition and I have both embarked on a 30 Day Plank Challenge, a 30 Day Squat Challenge and a 30 Day Yoga Challenge. This kept me busy everyday and I feel like the muscles in my legs have definitely tightened and become stronger which is amazing!

However, I found that the Squat and the Yoga Challenge were quite manageable whereas the Plank Challenge was super hard!

As you have to do quite a few down dogs and planks during the yoga workouts I found the Plank Challenge increasingly hard so I followed it up until day 21 and then I kind of stopped…and just did 1 minute planks daily. Although the thought of being able to do a 5 minute plank sounded really cool in the beginning, it got too difficult in combination with the other challenges and if I’m honest, it’s really boring to hold a plank for more than 3 minutes…right? I also thought that the steps are too drastic towards the end as the time was increased by 30 seconds every third or second day and I felt like I couldn’t hold a proper plank…so instead of hurting myself by doing it wrong and having a bad form I just cut down on the time and did it my way.
On a brighter note, I also managed to run at least once weekly! So hurrah for that! Now I’m excited for Month 6 where I’ll be sure to improve my diet again and fuel my body with some much needed nutrients!
